A classic cookbook.......................

Rosie, Rosie, Rosie!! You are a queen upon a very special pedestal which has very few equals! And anyone who possesses this tome of baking knowledge will absolutely agree! Rose Levy-Beranbaum has outdone herself in her latest offering of baking excellence! Where her "Cake Bible" was a standard for many years, this has outdone even that book!

The first time I met Rose was at a tiny little bookstore in Chicago many, many years ago. She was there for the signing of "Cake Bible" and she was the very first professional baker/chef that I had met on the beginning journey of my road to serious baking/cooking. She was most kind and gracious and I remember thinking of what a wonderful life would lie ahead for this sweet lady. Needless to say, her "Cake Bible" became a standard for many people but this latest offering from her talented mind is exquiste and is by far, one of the very best learning and reference books ever! Also, within the last couple of years, I have enjoyed her website/blog which makes her even more accessible for general or specific questions on baking. The journey she took us on while making this wonderful new book was a joy to follow.

It is a large, heavy, detailed book of cakes, cupcakes, bars, baby-size cakes with excellent photography, all printed on heavy, high-end paper to for which you would expect of books of this quality. Immediately at the introduction of each recipe, you have the serving size and baking time, followed by a brief synopsis of what she feels is the essence of that particular recipe. Then the "Batter" ingredients are laid out in a graphic form in which you are given the ingredients, with the Volume listed next to it, then the Weights of each ingredient, in both American and Metric form. Under this graph of information begins the steps to be taken beginning with any special equipment that would be needed, oven preparation, then the actual preparation of the batter. Any variations that could be taken, as well as "Highlights for Success" are listed and very much appreciated in that sometimes, there are little tricks, sidebars of information, and alternatives that you can incorporate into making the recipe a bit easier or more grand.

For example, I never realized that the leavening agents within cupcakes require that you bake them immediately or they will lose the power of that ingredient, so unless you have a large oven to bake all the batter at one shot, you're better off making the batter in batches.

Also, the presentation of these creations can be made so much more impressive with just a little creative help such as gingerbread boys and girls encircling a "Ginger Cheesecake" (who would have thunk it?) or using ladyfingers as an upright band of crust for the "Cranberry Crown Cheesecake" which also have a lovely wide ribbon around their base for an extraordinary presentation.

Being someone who appreciates photography in a cookbook, the photo's contained within are both superb and generous, with close-up shots that show detail. There is also single or sequential photography for certain cakes that require more intimate knowledge of preparation or assembly such as the "Holiday Pinecone Cake" (it acutal looks like a pinecone) or how to make "Spun Sugar" or how to pipe the "Ladyfingers", etc. Sometimes, just one little photo will clarify a question in your mind and Rose seems to know which step would benefit from a photo. Many of the cakes have their finished photo in this grand book but not all, though there are enough to satisfy everyone.

I have since made the Lemon Poppy Seed-Sour Cream Cake as well as the Individual Pineapple Upside-Down Cakes and they were excellent! Do I believe in the delicious outcome of the rest of the recipes? Absolutely...............many years of referring to Rose's "Cake Bible", "Bread Bible", and "Christmas Cookies" have made me a ardent follower and trusting devotee of Rose.

This is without a doubt one of the best books that I've seen and I would absolutely rank this as an instant classic. I would describe this not only as a wonderful book of recipes but an excellent teaching tool and reference guide to place on a more prominent part of your book shelve.

Superb. Superb. Superb

I cannot believe how good this book is. I wish there were more than 5 stars.

Once again Rose has produced an authoritative yet fun book that is beautiful in every sense and that is just as suited to the novice as to the expert.

Last night I made two batches of two different cupcakes and they are the finest I have ever tasted. I am planning on making every recipe.

Almost every cake is photographed, which I know many people find important in choosing a cook book.

Check out Rose's videos on youtube, which show her preparing these and earlier recipes. The fact that she posts her work for others to learn from for free is all you need to know about Rose. She is passionate about baking and sharing her knowledge and love of cakes, not about becoming a rich "celebrity" cook.

If Rose is reading this, I'd like her to know how inspirational she has been to me, both in my baking, which has improved dramatically since I nervously picked up her cake bible, and in a general sense of striving for excellence in what I do. And that her Mahogany Buttercrunch Toffee has earned me several marriage proposals.

Beyond the Cake Bible

I must first agree with the other reviewers that this book is yet another amazing book by Rose, but I believe there are probably many of you who, like me, own and love The Cake Bible (CB), but aren't sure if we *need* Rose's Heavenly Cakes (HC). My answer: while you probably don't need it, you will surely love it if get it.

Some comparisons:

Logistics:
* HC has color throughout, color pictures for most of the cakes, and good quality paper.
* HC keeps the ingredient measurements in three columns (volume, ounces, and grams), but the formatting makes it easier to read than CB.
* Most HC recipes are for 9" x 2" round cake pans instead of 9" x 1 1/2" pans (Huzzah! No more sticky notes all over the book with conversions for 2/3 or 1 1/3 of the batter!). Other recipes are for equally easy to find pans (such as 10-cup tube pans).
* She has omitted the pictures of the pans that go with the recipe (which for some reason I liked), and the picture of cake equipment (CB 446-447).
* The organization is different. Cakes and adornments are listed together. It's nice because you don't have to have three different bookmarks when making a simple cake as in the CB. The organization can make it a little bit harder to find recipes, especially for adornments, though. The index is good, but instead of going to the frostings or fillings section of the CB, you would need to look up Buttercream, Cream cheese-frosting, Curd, Fillings, Frostings, Ganache, Glaze, Whipped Cream, etc... It's not hard, but not as easy to flip through and compare recipes.

Content:
* From reading the intros, many of the cakes have been updated, and there are new ones such as gingerbread, German chocolate, and molten chocolate cakes. Of course, as with all Rose's recipes, she makes them her own, and avoids getting things too cloyingly sweet.
* Rose admits that she now "embraces less buttercream and less fancy décor." You can see that not only in the pictures, but also in the content. The piped decorations section is one page and includes only the star, shell, and bead, and Rose says, "the only time I pipe decorations on a cake these days is when I use a whipped cream topping." To surprise me even more, the Miette Rose cake even calls for a purchased royal icing rose!! I'm ambivalent about this change. On one hand, I love the simpler décor and I think it will be more accessible to others; I know I avoided buying CB for a long time because I thought it was just pretty, not yummy (which it's not, of course). With HC, however, no one will feel bad for making the Blueberry Swan Lake cake without the swans again! On the other hand, CB's 25 pages of piping decorations were clear and fun to play around with. HC does have some new decorations such as orange peel roses and the new lacquer technique used on the cake features on the cover.
* The shift away from buttercreams also means that there isn't the endless supply of buttercream variations that are in CB.

Overall, I am very pleased with this book and look to try more new recipes and techniques. I will probably start with HC instead of the CB when I want to make a new cake, but I'm still glad to have the CB around.

A Thorough Guide But Too Much Like Advertising For The Cruise Lines

For those interested in taking a cruise this book serves as a very thorough guide. It discusses pretty much all of the available cruises. It talks about planning your cruise and what experiences are available on board - spas, shows, activities and, of course, lots of food. It also covers the excursions available at the different ports of call and where each cruise line goes to, with an emphasis on the Caribbean, Alaska and the Mediterranean.

The only reason I am deducting a star is that the writers give only rave reviews for every cruise line. It seemed like they were often just advertising for the cruise companies rather than offering objective opinions that would be useful for its readers. This made it hard to figure out which cruise lines were best because the writers made each one sound so wonderful. So readers seeking to narrow their options might want to go online to the websites where people offer reviews on their cruising experiences rather than rely on this book.

But for all the nuts and bolts information on planning a cruise, what places you can cruise to and what activites are available, both at sea and on shore, this book is an excellent choice.

This is a good tool for first-time cruisers . . . and great info if you're going to the Caribbean. My cruise was to Canada (Atlantic side), so there wasn't a lot about the tours for Canada.

This is a well written and easy to follow guide to excel. Covers all the basics, but be warned that you have to have the actual program to use the CD. My workplace has the program on the office computers and when I got an office position I wanted to brush up on Excel before I transferred, but since Excel is an expensive program I didn't own it on my home pc. So the CD wasn't much use. Was able to study the text and get some useful pointers and tips on shortcuts tho.

So far I have used this book the most of the 3 Excel books I bought. It is easy to follow the instructions and have the results work. I was able to create column functions with little to no effort with this book.

Praising employees generates commitment, which leads to high-level performance, which causes customer and investor loyalty, it argues. The authors' point is illustrated through a long, tedious fable about a tribe of "Highlanders" who are showered with gems by a tribe of "Wurc-Urs," until, that is, the Wurc-Urs start to disappear because they're so frustrated by the lack of praise. The book contains a list of 70 ways to recognize employees (buy them a garden statue, write them a funny song, etc.), as well as a few bits of more journalistic evidence (brief accounts of business studies, a story from the Wall Street Journal about an employee who quit when his employer gave him a gold Rolex without offering to pay the income tax on the gift, etc.). Savvy managers are unlikely to buy into the idea that lavish praise is all it takes to generate profits and make the stock price go up, but the book may provide them with a few new ideas for how to make their employees feel appreciated. Whether you manage 1 or 50 people, this book is for you.

I came across the co-author Chester Elton at a seminar last year. He is very entertaining but most important, his message is one for all managers. It's up to managers to make their employees feel rewarded and recoginzed. The Invisible Employee tells us that this concept is one of the easiest and yet most overlooked aspects of our jobs. Using a fable format the authors drive home the point that happy employees do in fact perform better and contribute more. A great read for every manager!

Misleading title and a one-note solution for a multilayered problem

The Invisable Employee makes a valid point, but its certainly not a groundbreaking one and it doesn't address the problem promised in the title. The premise of The Invisible Employee is that most people don't feel appreciated and that corporations take good work for granted. Since this is true, and its also true that expensive turnover can be avoided by noticing the good work of employees--and letting them know you notice, this book makes a good, if not ground shaking, point.

The execution of the book is poor. A number of chapters are written in a strange, corny parables that soon become excrutiatingly boring. If you really love playing Zelda or Final Fantasy, you might like them..but probably not.

The Invisable Employee gives almost no practical advice on how to address the issue of discovering hidden potential in companies that do not exist in a video game style fantasy. The problem of invisable employees is huge and its too big to be solved with praise alone. Many corporations barely know their people beyond the resume submitted when they hire them. They hire them, assume they can do only what they were hired for, lay them off a few years later while hiring other employees who are less experienced in company matters. Why does this happen? In happens in part because the employees are invisible and no one bothered to develop a skills database or consider the potential of employees to adapt and learn new things. The problem is heartwrenching and extremely expensive.

Unfortunately this book won't do a thing to attack that problem.

The Carrot Guys Do It Again!!!

I am a huge fan of Chester and Adrian and my hat is off to them for writing a great New York Times Bestseller. Parables are huge these days and business people love 'em.

If you want an enjoyable read that is heart warming and informative this is it. And what's more, you might just learn something about how NOT to treat people who work for you.

Please understand I am biased in my opinion because if have gotten to know Chester Elton as a fellow author and he is simply a "stand up guy." You don't find people in this business like Chester, class all the way.

MADONNA G. CONSTANTINE, PhD, is Professor of Psychology and Education in the Department of Counseling and Clinical Psychology at Teachers College, Columbia University. She is a highly esteemed researcher in the area of multicultural counseling, and she serves in leadership capacities in various counseling and psychological associations across the country.

DERALD WING SUE, PhD, is Professor of Psychology and Education at Teachers College, Columbia University, and holds a joint appointment with the Columbia University School of Social Work. He is the coauthor with David Sue of Counseling the Culturally Diverse, Fourth Edition (Wiley), the most widely used multicultural text in counseling and psychology programs.

M. ANNE KATZENBERG, received her Ph.D. in anthropology from the University of Toronto in 1983. She holds a university professorship at the University of Calgary(Department of Archaeology). Her research interests include diet and health in past peoples, and in particular, she explores the various applications of stable isotope analysis to reconstructing paleodiet, paleodemography, and ecology. She serves on the editorial board of the Yearbook of Physical Anthropology and is the vice-president of the Paleopathology Association. In 2003, she was elected to the Royal Society of Canada. She serves as a consultant in forensic anthropology for the Medical Examiner of Alberta (southern division). Recent publications include “Identification of historical human skeletal remains: a case study using skeletal and dental age, history and DNA” International Journal of Osteoarchaeology, 2005, with G. Oetelaar, J. Oetelaar, C. Fitzgerald, D. Yang, and S.R. Saunders, and “Skeletal Biology: Great Lakes Area,” Handbook of North American Indians, Volume 3, 2006, edited by D.H. Ubelaker. She is co-editor, with Stanley Ambrose of Close to the Bone: Biogeochemical Approaches to Paleodietary Analyses in Archaeology (Plenum Press, 2001).

SHELLEY R. SAUNDERS, received her Ph.D. in anthropology from the University of Toronto in 1977. She is currently a professor in the Department of Anthropology, McMaster University, and the director of the McMaster Anthropology Hard Tissue and Light Microscopy Laboratory. Her research covers microscopic and macroscopic human dental and skeletal growth and development, dental pathology, and methods of sex and age estimation from teeth and bones. She holds a Canada Research Chair in Human Disease and Population Origins and is the founder of the McMaster Ancient DNA Centre. She is also North American editor of the International Journal of Osteoarchaeology and was elected to the Royal Society of Canada in 2001. Recent publications include the coauthored article, “Health of infants in an Imperial Roman skeletal sample: perspective from dental microstructure,” American Journal of Physical Anthropology, 2006, and “Sexual dimorphism of the dental tissues in human permanent mandibular canines and first premolars,” American Journal of Physical Anthropology, 2007, with A.H.W. Chan, B. Kahlon, H.F. Kluge, and C.M. FitzGerald.

I can't believe that this is the fourth edition of this book. Considering the lack of organization and typos, I'd think it was an unpublished draft of a book. It's honestly the worst book I have ever used. I found it harder to learn anything from than rudin. It's unclear what knowledge is a prerequisite for the material here, as the authors seeem to do some sort of review of first order linear differential equations in the beginning but then go off on different tangents. Often terminology will be left undefined, especially in the exercises where it actually matters the most. One highlight of this happening is the chapter on limit cycles, where no formal definition "limit cycle" is actually given. Perhaps this wouldn't be too bad, but there are exercises asking to PROVE things about limit cycles. And I assure you that this is not at all an isolated incident.

My impression is that the authors attempted to write a terse, rigorous account of differential equations. Instead we get an unmotivated disorganized potpourri of topics whose significance is never made clear.

Full of mistakes

This text is based upon lecture notes (written either by Rota and then bound by Birkhoff or vice versa) and it is VERY apparant that the authors spent little time on checking for mistakes. It seems as though every fourth problem has a typographical error or is completely incorrect. This textbook does not take an intuitive approach to the subject and the many errors gives me reason to rate it low.

Nothing is more frustrating to a student than to have a text make a claim, ask you to prove it, and then you find out the claim is false. This is not a unique occurance. Steer clear of this textbook.

Worst math textbook I have ever had the misfortune of using.

This is a terrible textbook. After being forced to use it for a class, I can safely say that in every set of problems there are at least 5 errors. I'm not talking about small typos--these errors disrupt the entire problem. Often, the author screws up equations entirely in the problems and randomly changes what he has named each variable. Also, it appears as if the authors didn't bother to solve out the problems they were doing. Some of the problems lead to long and tedious computation: if you're in an Ordinary Differential Equations class, you should know how to take a derivative. There's no point in forcing people to solve a fifth order linear Differential Equation leading to a system of 5 equations, it just wastes time and serves no purpose in illuminating the ideas the authors were trying to teach (try taking the fourth derivative of 4 variations of c*e^((sqrt(2)/2)*x)*sin((sqrt(2)/2)*x) and solving for the constants and you'll see what I mean). The book is also painfully outdated (Look forward to computers that can calculate to 7 decimal places!!!) rendering entire sections of the book useless. Half of the formulas are wrong anyway and can't be trusted without verification from someone who is already knowledgeable about the subject. For a book that is so expensive, and in paperback no less, I expected more examples and at least a reasonable editor. Unless you're forced to buy this book, or enjoy reading an unedited copy that the authors clearly didn't even look at after they typed, I would highly recommend against wasting so much of your money. Overall, just a terrible terrible textbook all around and not worth even buying as a reference text.
